5 pepper breakfast burrito

Tabasco Scorpion
Tabasco Habanero
Tabasco Pepper Sauce
Hatch green chili with potatoes
Black pepper
preparing everything ahead except for the cheesy eggs makes it quick to make. chase the burrito with hot black coffee for the auxiliary burn. don't take medicine, take tabasco. needs more Scorpion!

I made a hatch green chili and jalapeno pepper sauce. really good on a breakfast burrito. plenty of recipes on-line. pack the burritos in the plane and go!

perfecting my breakfast burrito.... make everything ahead except the eggs to have a really quick meal. I think the breakfast burrito is the
best airplane traveling food. I like them when they are hot from the kitchen, but they reheat very well in a microwave at an FBO. this is my breakfast every day. best with hot black coffee.
tortilla
black pepper
thick cut bacon, sprinkle the bacon on, don't pile it
eggs with cheese
hash browns with green chili sauce (make ahead, reheat 1 min in microwave) when you first make this in the pan, the aroma is beautiful.
3 spices (I use Tabasco and seem to be giving them more money, they must be becoming rich)
after rolling burrito, heat in microwave another 30 sec
for a kick, you can drink Tabasco from a shot glass at the hangar... for some pepper challenge fun, stop by and see me!
if you buy Tabasco by the gallon, it's cheaper. the hottest I could find in gallon quantities. it's not really that hot, TRUST ME>

experimenting with red chili flakes in the eggs and corn. I have never seen corn in a breakfast burrito, and I like it as a variation, but not all the time. if the bacon and potatoes (with green chili) is made ahead, these only take about 5 minutes to make. make a couple, eat one, and throw the other in the plane and go. great to reheat at an FBO.
+1 for the red chili flakes.

getting started.... I decided to lay a line of green chili on the potatoes instead of mixing them in. I like it better because every so often you get pure green chili. you can feel this burrito all the way to your toes. green chilis have the best heat because it's deep. that's the best way I know how to describe it. best when served with hot black coffee. the breakfast burrito is the best meal to fly away with and they reheat perfectly. toss one under your cowl after you land.
I would vote for the "green chili" be added as a basic food group! these are from Hatch and are hot, good and deep.

not for the purest, but adding black beans is a nice variety. back that up with a breakfast nutty buddy /coffee and good to go.

I have tried several flour tortillas: Mission, La Banderita, Ortega. I keep coming back to Mission flour tortillas because they are light and feel clean in the mouth. If the burrito gets too big, I overlap them and use two. the breakfast burrito is the perfect airplane food.
I purchased a breakfast burrito from my local diner this week for $8. it didn't hold a candle to home made. not even close. I can eat much better at home and for a lot less.

bacon is the correct meat for a breakfast burrito because sausage drowns out the flavors and is too heavy. after testing most of the available bacons to me I think I have found the best one.... Wright Bacon. I didn't know the Wright Brothers also invented bacon. trust me, it's the best.

a hint of sauteed garlic and onion flavors that was included in the green chili sauce is coming thru. strong Bialetti black coffee. coffee is supposed to be black. something sweet to finish.

bacaon so thick it looks like ham.... go with the wright bacon.

I used 50 lb of green chili in 4 months, so I had to buy a jar version. it's not too bad but my homemade green chili sauce is better. also, I'm trying the Tabasco garlic hot sauce. I like it.

when it's cold outside, you need a foot long burrito. you can feel the heat all the way to your toes. plans are in the works to take this to a 10-pepper.

I don't know if I can ever be in love with a food, but I may be getting closer. chile de arbol sauce with applewood pulled pork burrito is ringing all the bells. I strained the homemade de arbol sauce to make it smooth. it's a staple sauce. the flavor is just too good. a couple Juanita's in the sauce. eat the hot stuff and bypass the doctor. if you are not crying, it's not hot enough.
I think I may be ready for the Carolina Reaper challenge.
Unbelievable...
